Fennel 'Florence'*

Fennel (Foeniculum vulgare) is an aromatic herb and vegetable grown for its feathery foliage, bulb (in Florence types), and edible seeds. The plant forms upright, finely divided green fronds with a mild anise or liquorice flavour. In bulb fennel varieties, a swollen white base develops and is harvested as a crisp, sweet vegetable for salads, roasting, and cooking. It produces yellow flower umbels that attract beneficial insects and later form flavourful seeds used in cooking and herbal teas. Fennel grows best in full sun, fertile well-drained soil, and regular watering, and is valued for its versatility, fragrance, and ornamental garden appeal.
